Summer savory
Satureja hortensis
Annual. Small, grayish-green leaves can be used fresh, frozen or dried. Tiny pink flowers are edible. Flowering attracts pollinating insects. For best flavor, pick the leaves before the flowers appear. Bushy habit. 40 cm tall. Suitable for indoor culture.
Full sun, well-drained, dry soil. Direct sowing after the last frost or indoors 6 weeks before. Sow on the surface, seeds need light to germinate.
Germination: 60% in December 2025

Note
There is another summer savory, Ancienne d’Acadie. We grew the two varieties side by side to compare them. The only thing we noticed was that the Ancienne d’Acadie starts flowering earlier, about 2 weeks before the other.
