Squash Kikuza
Cucurbita moschata

Small, beige butternut squash, between 1 and 1.5 kg (12 to 18 cm diameter by 8 to 12 cm height). Flattened, ribbed shape. Non-fibrous orange flesh, good flavour. Can also be harvested immature (pale green) and cooked like zucchinis. An ancient variety originally from Japan, introduced to the USA in 1927. 100-110 days.

Full sun, well-drained, rich soil. Direct sowing after the last frost or indoor sowing 2 to 5 weeks before. Protect young plants from insects. 2 cm deep. 60 cm between plants.

Note
A little squash that I love to eat immature, when it’s green. There’s no need to peel it, just cook it in pieces like zucchini, sautéed in butter with onions. Or en papillote on the BBQ. Its texture is superb, a little like a pastry but even better! Once ripe, it keeps well and is perfect for oven-stuffed squash recipes.
